Solyanka is another kind of soup that mix shchi with pickle water and cucumbers and add spices, lemon juice, kvass and mushrooms and the result is a much thicker soup than others.

Borscht (or borsch, bortsch, borstch, borsh, borshch) is a soup of Ukrainian origin that became popular in many Eastern and Central European countries and therefore became a national, popular dish in Russia, too. It’s made mainly with beetroots but some use tomatoes as a main ingredient. Potato and cabbages are also added to the soup. It has two variants, hot and cold.

Syrniki are fried curd fritters with sour cream, jam, honey and apple sauce. One common salad is made with “Dressed herring” is chopped salted herring under a “coat”of shredded cooked beet, sometimes with eggs or vegetables.

Kholodets is made with chopped pieces of pork or veal meat and vegetables (carrots, onions) in minor portions.

Pies are also big in Russia, or better said, Blini, thin pancakes made with butter that are usually served in conjunction with religious celebrations.
